Seviche Elevates the Guest Experience with Expansion and Remodel

New Lounge, Restrooms, Private Dining and Parking Enhance the New Seviche

SevicheLOUISVILLE, Ky. (June 24, 2011) – On Friday, June 24, Seviche debuts its new expanded facilities following an approximately four week closure for renovations. The success of the restaurant, combined with the vacancy of adjacent space allowed chef/owner Anthony Lamas to add more seating and amenities to enhance the guest experience. The expanded, newly decorated dining room features 30 additional seats, most of which are in view of Bardstown Road, and the new lounge also accommodates 30. The bar has been redesigned and updated with top-of-the line equipment, including temperature-controlled wine storage. The full menu is available in both the bar and lounge, and Chef Lamas plans to add a menu of bocaditos, tasty Latin-style snacks, in these areas in the future.  A private dining room with full audio-video capabilities is also now available for seated parties of up to 60 guests and cocktail receptions for 100. Diners will also find updated restroom facilities and ample onsite parking with the addition of more than 40 spaces across Stevens Avenue from the restaurant. The new Seviche also now features a totally remodeled state-of-the-art kitchen.

Seviche LoungeAlong with the new changes to the facilities at the restaurant, chef Lamas is pleased to announce Hap Cohan as Seviche’s new general manager. Cohan joins front-of-house manager Madeline Doolittle in creating a superior dining experience for Seviche’s guests. Cohan comes to Seviche from Mitchell’s Fish Market, where he was honored by the company as “National General Manager of the Year” in 2010. Cohan, who grew up in Bonita Springs, Fla., has always had an interest in the restaurant and seafood businesses. He cultivated his expertise while working for Cameron Mitchell Restaurant Group for more than nine years, including tenures at Martini Italian Bistro and Mitchells’ Fish Market in Louisville and Cincinnati.

The new décor at Seviche will match the culinary experience, offering a fresh, modern Latin appeal. Designed by Olive Branch Design in collaboration with chef Lamas, the new interior reflects the chef’s character and commitment to creating the best culinary atmosphere for his guests. With a mix of textures and materials, including copper and leather furnishings, upholstered and draped walls of soft amber and hand-hewn wooden beams and columns, the design pays homage to Lamas’ Latin heritage and award-winning cuisine. Stained concrete floors offer practicality and showcase the character and age of the building.

Octopus LightsThe color palette of amber and brick orange provides a warm and welcoming backdrop for the modern components of the bar and artwork. Gold granite counters are set off with rich wood, and hand blown glass fixtures known as “Octopus Lights” accent the bar and foyer. Of special note are the Latin “speakeasy” style doors used throughout the restaurant which feature iron hardware and clavos. Incorporated into the bar design is a banana fiber from South America that provides income for the residents of a rural village. The modern details throughout the interior lend balance and comfort to the established and respected traditions of Seviche.

Chef/owner Anthony Lamas was a 2010 and 2011 semifinalist for the James Beard Foundation “Best Chef Southeast” award, and the restaurant was named one of the “ten great places for Latino flavor and flair” in the country by USA Today. All of Seviche’s seafood comes from sustainable sources and is harvested in a manner that does not harm the environment.
